Maple Poached Pears with Coconut Mascarpone (vegan)


It’s been a while since my last blogpost however I wanted to share with you this delicious recipe I recently created that was such a delicate and fresh treat that will satisfy all your healthy dessert cravings….and yes it’s all plant based, vegan and glutenfree!!

I was talking to a friend yesterday which made me reflect on thoughts that we rarely share with others…. This may seem a bit abstract but you might relate to this as well…..

We live In a time of sensory overload from social media among other things….. It’s easy to get absorbed with all the amazing creative content on Instagram and I do think this platform has an amazing purpose of giving people an opportunity to share their creative expression and connect with other likeminded people as there have been  a longing for this level of creativity that we didn’t have in the past (just 10 years ago). With that being said I think there is a downfall to this… that we tend to compare ourselves with others and feel we need to perform to be worthy or do more to be enough or “seen”.

 I need to remind myself often that I’m in a perfect place and worthy just as I’m…no need to perform of prove anything…simply by being, I’m enough. Our internal world is such a sacred place and I believe it can be nourishing for our spirit to get away from the external world daily and get the sense of detachment from our “identity” both in relation to other people and work. We tend to find our worth in the role of what we do and am to others and what we have achieved where in reality we are all equally worthy of love…in fact we are love when we remove our “Identity” we have in this world.

Just a few thoughts from the introvert thinker …. I’m learning to share more what’s on my heart (than mind) and I feel it’s a valuable reminder for us that I we all are equally unique and has something to offer. I get inspiration from various very different accounts and sometime it’s a  post or image that really talks to me on a given day ….some words  or reflections that resonates with my heart and brings me joy or makes my day brighter that day. That’s is enough reason for me to value and appreciate that particular person behind the account….

Here is the recipe “Maple Poached Pears with Coconut Mascarpone” 
This would be perfect for any Christimas gathering or just as light dessert anytime…



Servings: 2-4


15 min pre-prep + 45 min


Vegan, glutenfree, refined sugarfree



  • 4 large pears (pealed with stalk)

  • 125 ml maple syrup

  • 1 cinnamon stick + 1/4 tsp ground cinnamon

  • 1 vanilla bean, spilt, seeds scraped

  • 1/4 tsp lemon zest + 1 tbsp lemon juice

  • 1 can pure coconut milk (no additives)

  • 1 tbsp of sunflower lecithin.

  • 2-3 tbsp ground xylitol or desired drops of stevia

  • 500ml water


  • Start preparing the coconut mascarpone blending coconut milk with the powder xylitol, lecithin and seeds from vanilla bean in a blender. pulse blend or just a short blend to incorporate the lecithin and sugar to the coconut “cheese”.

  • store this in a glas jar with the lid on top not sealed for 6 hours in a warm place or in a dehydrator on lowest heat for a few hours to get the culturing process activated.

  • then you can store it in the fridge and it will thinking to a cream cheese consistency because of the lecithin. (the best thing is to make this the day prior to serving this as it has to “sit” a bit to create the texture.

  • Place water, maple syrup, cinnamon, lemon zest and juice in a saucepan over medium heat. bring to boil and then reduce heat to low and add the pears. place some baking paper over the pears and cover the saucepan and cook for 20min or until the pears are tender. set aside to cool.

  • then you continue to simmer the spiced maple syrup for another 15 min or so until it has a thickened slightly. discard the cinnamon stick and lemon zest and strain the syrup.

  • Then serve the pears on a plat with a bit of the syrup and scoop of the coconut mascarpone…. Voila!!
