Raw "Pebernødder" a la Christmas Spiced Raw Cookies
During December and the holidays I sometimes find it tempting to fall into the sliding “trap” of marcipan and other Christimas sweets as they hold so many memories from the past …. of a magical time of childhood and the sense of Christmas!! Don’t get me wrong that’s all lovely we have our wonderful memories however I like to make the Christimas also about health, being more loving and kind to the people we love (including ourselves) and spending quality time together.
I love creating healthy snack treats that feels indulgent so I created a Raw version of an old Danish Christimas biscuit tradition and it turned out so well….
It has all the spice sensations that I recall from all the Christmas baking and I’m sure also your kids will love it too.
This recipe makes about 15-20 snack balls
Raw, Vegan, Glutenfree, Sugarfree
100 gram ground almonds
200 gram soft deglet nour dates
1/2 tsp cinnamon
1/4 tsp cardamomme
1/8 tsp ground clove
1/4 tsp ground ginger
a pinch of pink salt or sea salt
Blend all ingredients in a food processor.
Process until a sticky mass forms.
Roll the dough into bitesize balls and shape them with your fingers into a little round “fat cookie”
Set in the fridge or store in a cool place.
